Place the dried dates in bamboo baskets or iron trays and blanch in boiling water for about 5 minutes until the fruit skin is slightly soft. Immediately cool in cold water after heat treatment. ④ Drying. Natural drying takes about 20 to 25 days, with the thickness of the dried date pile generally being 3 to 5 centimeters. Spread out after the sunrise in the morning, collect into a pile when the sun sets, cover with reed mats, and turn a few times in the middle of the day. Dry until the skin wrinkles and turns deep red, and the weight of the dates reduces to more than half of the original weight, then start to pile them up to soften. In artificial drying, generally, 12 to 15 kilograms of dates are loaded on a 1-square-meter drying tray, with the thickness not exceeding two layers of dates. For small fruit varieties like chicken heart small dates and golden thread small dates, it can be loaded a bit thicker. After placing in the drying room, the temperature should be steadily raised to 55 to 60°C within 6 to 8 hours, then roasted for 8 to 10 hours; continue to raise the temperature to 68 to 70°C, but not exceeding 75°C, and roast for another 6 hours, gradually reducing the temperature to 50°C. The total roasting time is about 24 hours. During roasting, efforts should be made to ensure that all dates are heated evenly. After drying to about 70 to 80% dryness,晾晒 or air-drying is conducted for about one week. ⑤ Softening. After drying, dried red dates need to be piled and softened for 15 to 20 days to balance the moisture content. In the warehouse, stack the dates to a height of about 1 meter, with the length and width of the dates adjusted flexibly according to the warehouse conditions. In the date pile, bind straw into bowls about 10 centimeters thick at intervals of more than 1 meter to allow for heat dissipation and ventilation. Check regularly to prevent overheating, fermentation, and pest and rodent damage; if necessary, they can also be turned over. ⑥ Grading. After softening, the dried red dates are generally graded based on size, color, and degree of damage. The grading standards vary depending on the variety of the dates. Below is a brief introduction to the grading of three types of dried red dates: Jinsi (golden thread) small dates, long and round dates, and small dates. Jinsi small dates are divided into six grades: - Guwang (Emperor) grade: 180 to 220 dates per kilogram, no insect damage or cracks, red and glossy. - Special grade: 220 to 260 dates per kilogram, no insect damage or cracks, red and glossy. - First grade: 260 to 360 dates per kilogram, no insect damage or cracks, red and glossy. - Second grade: 460 dates per kilogram, insect damage and cracks allowed to account for 6%. - Third grade: Wind-fallen dates, color ranging from orange-yellow to red, dry flesh, poor flavor; insect damage and cracks allowed to account for 10%. Out-of-grade dates have the worst quality. Long and round dates are divided into three grades: - First grade: Naturally dried (squeeze slightly, can return to original shape, not sticky), even in size, thick flesh; Guohong dates are purple-red, long dates are bright red, no mildew, no impurities, no sap, no unripe fruits, the sum of worm holes and broken heads not exceeding 5%. - Second grade: Naturally dried, even in size, thick flesh; Guohong dates are purple-red, long dates are light red; no mildew, no impurities, the sum of broken heads and worm holes not exceeding 5%, unripe fruits not exceeding 3%, sap-spoiled fruits not exceeding 2%. - Third grade: Naturally dried, uneven in size, color all light red; no impurities, no mildew, the sum of broken heads and worm holes not exceeding 15%, unripe fruits not exceeding 5%, sap-spoiled fruits not exceeding 5%. Small dates are divided into four grades: - Special grade: Naturally dried, even in size, thick flesh; up to 150 dates per 500 grams; purple-red color; no mildew, no impurities, no worm holes, no sap, the sum of broken heads and oil heads not exceeding 1%, no withered strings. - First grade: Naturally dried, even in size, thick flesh, purple-red; no mildew, no impurities, no sap, the sum of worm holes, broken heads, and oil heads not exceeding 5%, no withered strings. - Second grade: Naturally dried, even in size, red color; no impurities, no mildew, the sum of worm holes, sap, broken heads, oil heads, and withered strings not exceeding 10%. - Third grade: Naturally dried, red color; no mildew, no impurities, the sum of worm holes, sap, broken heads, oil heads, and withered strings not exceeding 15%. ⑦ Packaging. Dried red dates are mostly packaged in ordinary jute bags, with each bag containing 50 to 100 kilograms. Using plastic bags for moisture-proof packaging is better, with each bag containing 1 to 10 kilograms.
